GAZPACHO-STYLE BEETROOT SOUP
Suitable for: mucositis
Ingredients
200 mL Remune™ Raspberry
100 g boiled beetroot
1 Tbsp olive oil
75 mL water
50 g peeled and seeded tomatoes
1 tsp red wine vinegar
1 pinch salt
Instructions
Finely dice the tomatoes and beetroot. Put them, along with all other ingredients, including Remune™, into the jar of a blender. Blend at maximum speed until you get a smooth and emulsified texture.

COLD PEACH AND CUCUMBER SOUP
Suitable for: anorexia
Ingredients
200 mL Remune™ Peach
200 g peaches
50 g peeled and seeded tomatoes
30 g green bell pepper
50 g cucumber
10 mL sherry vinegar
10 mL olive oil
50 mL water
1 pinch salt
50 g ricotta cheese
Instructions
Put water, peeled peaches, peeled cucumber, bell pepper, vinegar and tomato into the jar of a blender. Blend briefly to combine. Add Remune™ Peach and oil. Cover and continue to blend until you get the desired texture. Season with salt to taste. Place the ricotta cheese in the middle of a bowl and pour the cold soup on top.

ZUCCHINI AND GREEN APPLE SOUP
Suitable for: xerostomia
Ingredients
Serves 1
200 mL Remune™ Peach
1- 2 slices green apple
1 zucchini
1 pinch salt
150 g potatoes
Instructions
Wash and peel the zucchini, potatoes and apple. Dice and place in a pot of water over medium heat. Boil until all ingredients are tender. Remove from water, mash whole mixture and add salt. Add Remune™ Peach and mash again.
Serve cold or hot.

PEACH CREAM WITH VANILLA
Suitable for: mucositis
Ingredients
Serves 1
200 mL Remune™ Peach
100 g peaches (fresh or canned)
10 g vanilla sugar
50 mL cold water
15 g cornstarch
50 mL heavy cream
Instructions
Put water into a pot with cornstarch. Mix until there are no lumps. Place over medium heat and stir until it thickens. Set aside.
Pour Remune™ Peach, heavy cream, vanilla sugar and peaches into another pot. Blend with an electric mixer until you get a smooth cream. Add the cornstarch mixture and continue to mix until you get a homogeneous cream.
Serve cold.
