STRAWBERRY HONEY MOUSSE
Suitable for: mucositis
Ingredients
200 mL Remune™ Peach
150 g strawberries
45 g honey
200 mL whipping cream (35% fat)
Instructions
Whip very cold cream with an electric mixer or immersion blender to stiff peaks. Crush the strawberries and pass through fine-mesh strainer. Mix the honey and the crushed strawberries. Fold into the whipped cream using a silicone spatula. Gradually fold the Remune™ Peach into the mixture. Cool in fridge for at least 2 hours before serving.

RASPBERRY TIRAMISU
Suitable for: xerostomia
Ingredients
Serves 1
200 mL Remune™ Raspberry
4 Soletilla sponge cakes
15 g white sugar
25 mL heavy cream
70 g Mascarpone cheese
8 g neutral gelatin powder
125 mL water
Instructions
Mix 50 mL of the water with 50 mL Remune™ Raspberry in a bowl. Place sponge cakes in the mixture and set aside to soak. Dissolve the gelatin in a small pot with 75 mL of the water. Mix over medium heat until totally dissolved. Put the cream, Mascarpone cheese, the rest of the Remune™ Raspberry and the sugar in a bowl. Beat until you get a homogeneous cream.
Add the dissolved gelatin and beat for another minute. Present the tiramisu in a rectangular dish: Place two sponge cakes on the bottom and cover with half the cream. Then place the other two sponge cakes and cover with the rest of the cream. Leave in the fridge for 12 hours to set before serving.

TART RASPBERRY CREAM WITH LEMON
Suitable for: dysphagia
Ingredients
Serves 1
200 mL Remune™ Raspberry
50 g raspberries
25 mL lemon juice
15 g white sugar
50 mL heavy cream
50 mL water
15 g cornstarch
Instructions
Pour the water, cream and cornstarch into a pot. Heat over medium, stirring constantly, until it thickens. Pour the Remune™ Raspberry into a bowl with the raspberries, lemon juice and sugar. Add cream mixture. Blend with electric mixer. Strain and serve cold.

PEACH MUG CAKE WITH CHOCOLATE

Ingredients
Serves 1
200 mL Remune™ Peach
60 g wheat flour
25 g white sugar
15 mL sunflower oil
7 g yeast
1 egg
10 g chocolate shavings
Instructions
Pour the Remune™ Peach, egg, flour, yeast, oil and sugar into a bowl. Blend until you get a homogeneous mixture. Add the chocolate shavings and mix with a spoon.
Pour the mixture into two mugs. Put one mug into the microwave for 2 min at 75% power.
Let rest for 1 min and microwave again for 1 min at 75% power. Repeat with the other mug.
Let rest for 1 min and serve cooled.
